Egg Drop Soup

Put that takeout menu back in the drawer - in ten minutes you can be slurping your own fresh, hot egg drop soup! As a lover of soup (no matter the time of day) I love this even for breakfast. Or you can enjoy it for dinner paired with Vegetable Fried Rice.

Gluten-free (with gluten-free soy sauce)

Ingredients
1-2 eggs (your choice - I like my soup eggy thick :)
2 cups organic low-sodium vegetable broth
2 green onions
1 Tbsp. soy sauce
Garlic salt/pepper

Optional add-ins: I almost always use frozen peas because it's so convenient. You can also add spinach, corn, mushroom, etc.

Directions
Slice green onions.
Heat vegetable broth, soy sauce, green onions, garlic salt/pepper, and any additional add-ins in saucepan over med-high heat. Bring to a simmer.
Beat eggs in a bowl.
*Slowly* pour eggs into simmering broth while stirring clockwise to create egg ribbons.
Let heat for a minute. Season to taste with additional salt/pepper if needed.

  3. I just made this as well... And it was SO DELICIOUS!!! I didn't have veggie broth (or onion) :(, so I used some of my chicken broth, and added various other spices and poured it over some plain cooked rice and it was filling and tasty :) Thank you for sharing, God bless ♥

  4. Wow! this went together so fast and was very flavorful! I have a new go to quick fix soup now! I used another reviewers suggestion for a dash of sesame oil and added a dash of red pepper flakes ( I am a pepper belly!)

  6. I never realized this was so easy to make. Egg drop is my daughter's favorite soup. Does it taste much different if made with chicken broth? I'd like to make it for her tomorrow and that's all I have on hand.
