Garlic Bread

Homemade garlic bread is easy to make and so comforting. If you're a fan of cheesy garlic bread, I usually top one of the halves with some dairy-free mozzarella - it's delicious both ways :)  Don't forget the Marinara Sauce for dunking... it's a match made in heaven!

Vegan (with dairy-free cheese)

1 loaf Ciabatta bread (or other Italian loaf)
2 cloves garlic, minced
2 Tbsp. olive oil
2 Tbsp. vegan buttery spread (I use Earth Balance)
Dried basil for sprinkling
Dried oregano for sprinkling
Cashew parmesan*
Optional: dairy-free mozzarella

Preheat oven to 375.
Melt butter in the microwave. Then add olive oil and garlic, stir to combine.
Cut the bread loaf in half, lengthwise. Brush the mixture on top of each half of bread.
Sprinkle with basil and oregano.
Place halves back together, wrap in foil, and bake for 15 minutes.
Remove bread from oven and turn on the broiler.
Separate the halves and sprinkle cashew parmesan on top (and also dairy-free mozzarella if using).
Return to oven under broiler for a minute or two. Be sure to keep an eye on it!

*For the cashew parmesan: place 1 cup raw cashews, 6 Tbsp. nutritional yeast, 1/2 tsp. salt, and 1/4 tsp. garlic powder in a food processor and combine. Save leftovers in a sealed container in the fridge.

  3. I could seriously eat a whole loaf of garlic bread by myself lol. This looks great and love that you added mozz. to the bread.
