Asparagus is available March-July, with the peak season April-May. People first began eating it way back in ancient Egypt. And apparently Roman emperors were so crazy for it they had "asparagus fleets" go out and gather it for them!
Nutrition
Asparagus packs a big nutritional punch. To name a few, it's an excellent source of folic acid, vitamins A, C, and K, and has many powerful antioxidants.
Simple Cooking to Maximize Flavor and Nutrients
Saute in a small amount of broth for 5 minutes. Grilling and broiling are also great.
Whichever method you choose, be sure to cook it al dente. Overcooking will cause it to lose its flavor, texture, and nutrients!
