Hawaiian BBQ Quesadillas

One of our all-time favorite pizzas is "Hawaiian style" with BBQ sauce, pineapple, red onion, and cilantro. It's a combination we crave often, but some nights lack the time to prepare an actual pizza. So a while ago I started making these simple, quick pita pizzas which we find are a fantastic substitute to satisfy our pizza craving. Now I've started using the ingredients in these quesadillas as well, which is even faster to prepare. You'll notice there aren't specific measurements listed below, as I tend to vary it a little each time (though there always seems to be a small mountain of cilantro and pineapple - yum!) Add as much as you want to your taste and enjoy!


Vegan (with dairy-free cheese)
Gluten-free (with gluten-free tortillas)

Ingredients
Pineapple tidbits, halved
Red onion, sliced
Cilantro, roughly chopped
BBQ sauce
Shredded cheese (I use a 3 cheese blend)
Tortillas

Directions
On a skillet over medium heat, place a tortilla and lightly sprinkle with cheese.
Add cilantro, pineapple (excess juice removed), onion, and drizzle with BBQ sauce.
Top with another light layer of cheese.
Place another tortilla on top and let heat for about 10 minutes, turning halfway through until cheese is melted.

  8. The boyfriend and I love dillas. We often make them similar to this recipe minus the cilantro and bbq sauce. Well, since I've finally found a BBQ sauce at the store that doesn't have a ton of strange ingredients and is sweetened with agave nectar instead of sugar, I have to try this! I'm also going to make it with the mashed avocado like in your other recipe. I'm more than willing to put avocado in any recipe possible. I'm sure the dairy loving boyfriend will still insist on cheese on his but I know they're going to be amazing. Also I just love your recipes. I've been trying to eat more plants and less meat and dairy. I thought the food wouldn't be as tasty, but every recipe I've tried is delicious. Thanks a ton!

    1. Hi Chrissy! First of all, thanks for your sweet comments about the recipes - that's awesome to hear. SO glad you're finding ones you enjoy! Secondly... AHHH!! Great minds must think alike because an avocado/vegan version of this quesadilla is going to be one of my upcoming posts soon :D If you're near a Trader Joe's, they have awesome BBQs without the weird ingredients. Our fave is bold and smoky Kansas City Style - amaaazing :) You could also try making your own, we've done that and love it! Hope you and your bf enjoy these!!! Thanks for the message!
