Hey peeps - we're changing it up today! I want to start sharing recipes we've made and love from other bloggers. There are so many amazing recipes out there, and here are four that we've been loving lately:
1. No Bake Chocolate Chia Power Balls (The Honour System)
These feisty little balls have protein coming at you 3 different ways - with almond butter, oatmeal, and chia seeds. They're an awesome snack when you're looking for that little bit of "oomph" to carry you through the day! Plus they have that fun little "pop!" when you bite down on the chia seeds. :)
2. Vegan 7-Layer Dip (One Ingredient Chef)
YES! We made a few minor adjustments by blending the nutritional yeast into the cashew cream, along with a couple garlic cloves to make a cheesy sauce layer. My husband said the only thing wrong with it was that it was too good and he wanted to eat the entire thing. ;)
3. Cashew Cheese Sauce (Vegan Military Wife)
Speaking of cashew cheese, this our go-to sauce. You guys... it's incredible stuff! I'm continually amazed by raw cashews. We've experimented with lots of "cheese" sauces but this one definitely stands out from the crowd, especially with how easy it is to make. The only change we make is soaking the cashews before blending, and adding a touch of salt to the sauce. We love it with our broccoli cheese baked potatoes, and as a dunking sauce for potato rounds. Try it!!
4. Banana-Oat Blender Pancakes (Mountain Mama Cooks)
I'm usually not a pancake person, but I crave these. My toddler and husband go wild for them as well, so it's been a go-to breakfast in our house at least once a week, often more. We've tried many gluten-free pancakes and these are by far the best we've had. Both taste and texture are phenomenal. I love that they're made from oats instead of flour! We make them vegan in addition to gluten-free with the easy substitution of a flax egg, which works great.
