Peak asparagus season is in the spring from March to May, but it can often extend through July. This is when you'll find the flavors and nutrients are highest, and the cost is generally the lowest. Asparagus is a great source of folic acid, vitamin C, vitamin A, and vitamin K. It also provides health-promoting phytonutrients like beta-carotene, lutein, and zeaxanthin which are powerful antioxidants.
Tip: When selecting asparagus, look for spears that are firm with bright color and closed tips. These tend to have the most flavor and nutrients. I purchase organic when possible, and I personally enjoy medium-sized spears. (Not too thin which can be easily overcooked, and not too thick which can be tough and woody.)
