Vegan Carrot Recipes

Carrots are available throughout the year, however their peak season typically runs summer through fall. They are one of the richest vegetable sources of carotenoids (including alpha and beta-carotene) which provide the deep orange color. Carrots are also an excellent source of vitamins A, K, and C, and help support healthy vision and the immune system. Plus I love their sweet, earthy flavor.
Tip: When selecting carrots, try to find ones that are firm and bright in color. If they are excessively cracked or limp, that usually means they are past their prime. Store carrots tightly wrapped in the refrigerator. (I try to purchase organically grown carrots when possible.)
