Vegan Kale Recipes

Browse 15+ easy vegan kale recipes! These healthy recipes either feature or include this nutrient-packed ingredient. Kale is a member of the cruciferous family and is a great source of vitamin K, vitamin C, and vitamin A, fiber, and calcium. It is also rich in powerful phytonutrient antioxidants.

Kale is available throughout the year, however the peak season is during the cold months. This is when you'll find it with a sweeter flavor and crisp texture. The two main varieties are common curly kale and lacinato kale (which is also known as Tuscan or dinosaur kale). I find lacinato has a slightly more tender and delicate flavor, but I use both equally and purchase organic when possible.
