Vegan Kale Recipes

Peak season: Kale is available year-round, however the peak season is during the colder months. This is when you'll find it with a sweeter flavor and crisp texture, often at a better price.
Varieties: You'll find both common curly kale and lacinato kale (also known as Tuscan or dinosaur kale). I notice lacinato has a slightly more tender and delicate flavor, but I use and enjoy both varieties. I also purchase organic whenever possible.
Buying tip: For best flavor and nutrition, look for kale with hardy stems and bright, firm leaves that are deeply colored. Avoid bunches with soft, wilted, or browning leaves.
Storing: I find kale is best stored in a tightly wrapped plastic storage bag in the refrigerator, removing as much air as possible from the bag to slow the respiration rate. (And don't wash it before storing which causes it to spoil quicker.)
