Miso-Glazed Green Beans (15 Minute!)

Our family goes wild for this amazing Miso-Glazed Green Beans recipe! Fresh, snappy green beans are glazed with a sweet and savory sauce. It's an easy, delicious side dish that's ready in 15 minutes! (Vegan, gluten-free, oil-free.)

Our family goes wild for these miso-glazed green beans that are packed with amazing flavor. They're sweet, savory, and so delicious!

Best of all, they only require 6 simple ingredients and take 15 minutes to make with very simple preparation.

It's a fantastic choice for a summer side dish (with fresh garden green beans) or even a flavorful addition to your holiday table in the winter. I hope you love them too!

Ingredients for Miso Green Beans

For this recipe, you'll combine:

  • Fresh green beans: You'll need one pound green beans for this recipe. I often use French green beans (haricot verts) because they have a nice, tender texture without the tough strings, and delicate flavor. But regular garden beans work great too. It's a great dish to enjoy in the summer or early fall when green beans are at peak harvest and flavor. (Green beans are usually available year round, but they are especially fresh during May through October!)
  • Sesame seeds: Either regular or lightly toasted sesame seeds will work.
  • White miso paste: Miso is a fermented soybean paste. It has a mild umami flavor and is delicious as an added seasoning.
  • Fresh lemon juice
  • Tamari: Or you can substitute soy sauce or coconut aminos. (Be sure to use low sodium if desired.)
  • Pure maple syrup: Or agave or other sweetener of choice.

Cooking Green Beans

Use your own favorite cooking method for this recipe! I steam my green beans in a covered pan as noted below to help retain the nutrients. But feel free to sauté, boil, or even roast your green beans to tender perfection. (While your beans are cooking, you'll whisk together the miso glaze in a small bowl.)

Customizing

Flavors: Add fresh ginger, garlic, black pepper, rice vinegar, or toasted sesame oil to the mixture if desired.

Make it spicy: Sprinkle with red pepper flakes or a dash of sriracha to taste before serving.

Vegetables: Stir in other veggies like asparagus, zucchini, mushrooms, green onions, tomato, etc.

Serving

Drizzle the leftover sauce: The miso glaze runs thin, so I like to spoon the leftover glaze over the top of the plated green beans before serving for maximum flavor.

Add nuts: You can also toss this dish with sliced almonds or walnuts before serving for extra crunch and texture.

Storing

Store leftovers in an airtight container in the refrigerator. This dish tastes best when fresh, but I find it keeps for about 2-3 days in the fridge. Reheat in the microwave when ready to enjoy.

Ingredients

  • 1 lb. fresh green beans
  • 2 tsp. sesame seeds

For the miso glaze:

  • 1 1/3 Tbsp. white miso (1 Tbsp. + 1 tsp.)
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. tamari
  • 2 tsp. pure maple syrup

Instructions

  • Prepare green beans: Rinse your green beans and trim off the ends.
  • Cook green beans: Place a large skillet (with lid), over medium-high heat, and add 1/2 cup water or vegetable broth. Once water/broth is hot, carefully add green beans and cover with lid. Steam for about 4-5 minutes or until beans are crisp-tender. (*Or use your own favorite method of cooking green beans.)
  • Prepare the miso glaze: While the beans cook, prepare the glaze. Add all glaze ingredients to a medium mixing bowl. Whisk to combine until miso clumps are dissolved. (It may take a minute!)
  • Combine: When green beans are crisp-tender, drain, and immediately add them to the bowl with miso glaze. Add sesame seeds. Toss well to thoroughly combine. The sauce runs thin, so drizzle any remaining glaze over the top of the beans before serving for maximum flavor!

Notes

*Cooking beans: Feel free to use your own favorite method of cooking green beans for this recipe. (You can boil them for 4-5 minutes, or use a steamer basket instead.)
Other flavors: Add freshly grated ginger or garlic to the glaze if desired.

    It was tasty, but the sauce was a little runny. It tasted fantastic, but would be nice if was thicker so it would coat and stick on the beans better.

      Hello, Jared! Thanks a lot for giving this a try and sharing your thoughtful feedback. I completely agree about the sauce not fully sticking to the green beans. (Which is why I spoon the leftover glaze over the top before serving.) But I suspect if you warmed the miso glazed in the pan with the green beans for a couple minutes after they cook, that might do the trick! (Though you may lose some of the probiotic benefits of the miso as it heats.) I'll be sure to update if I give this method a try. I appreciate your thoughts!

    This is excellent. If you're not that familiar with miso, I'm not, though I have it in the fridge because it's good for you, was thinking, no oil, miso doesn't sound so good. But what a pleasant surprise! It's so tasty! I will definitely put it into green bean rotation. Thank you, Kaitlin!
