Strawberry Balsamic Dressing (Oil-Free)

Refreshingly sweet and ready in just 5 minutes! A great way to liven up salads, especially in the summertime when strawberries are in season.

Ingredients

  • 5 oz. fresh strawberries, hulled (about 1 heaping cup)
  • 1/4 cup balsamic vinegar
  • 1 Tbsp. pure maple syrup (or less)
  • 1 1/2 tsp. Dijon mustard
  • 1-2 tsp. poppy seeds (optional)
  • 1/8 tsp. salt

Instructions

  • Add all ingredients (except poppy seeds) to a high-speed blender. Blend until smooth.
  • Stir in poppy seeds, if using.

Notes

Storing: Store in a sealed jar or airtight container in the fridge. I find it keeps for about 4 days.
Yield: Recipe makes 1 cup dressing.
Creamy version: Stir in up to 5 oz. vegan yogurt (plain & unsweetened) for a creamier consistency.
