Chipotle Crema (Vegan!)

A creamy, dreamy sauce full of smoky flavor! Spoon it over your tacos, burritos, nachos, rice bowls, or enjoy it as a spicy dipping sauce.

Ingredients

  • 3/4 cup raw cashews (soaked*)
  • 2/3 cup water
  • 1 chipotle in adobo sauce
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. apple cider vinegar
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 1/4 tsp. salt

Instructions

  • Place all ingredients in a small high-speed blender. (I use a NutriBullet.) Blend for 20-30 seconds until smooth.
  • Taste and adjust if needed. (More water for a thinner sauce, more salt, vinegar/lime juice for acidity, or more chipotle or adobo sauce for spicier.)

Notes

*Soaking cashews: Before blending, soak the cashews in room temperature water for at least 4-6 hours or overnight. Then drain and rinse before using. Or you can "quick soak" the cashews: Place cashews in a heat-safe bowl and carefully add hot/boiling water until cashews are covered. Let sit for about 10-15 minutes. Then drain and rinse.
Oil-free option: Chipotles in adobo contain a tiny amount of oil. Substitute with about 1/4 tsp. chipotle powder (more/less to taste).
Yield: Recipe makes 1 heaping cup sauce.
