Blueberry Salad Dressing (Oil-Free!)

This vibrant blueberry dressing is naturally sweetened, slightly creamy, and so delicious! Drizzle it over your favorite salads for antioxidant-rich goodness.

Ingredients

  • 1 cup fresh blueberries*
  • 3 Tbsp. fresh lemon juice
  • 2 Tbsp. apple cider vinegar
  • 1 Tbsp. pure maple syrup
  • 1/4 cup hummus
  • 1/4 tsp. salt

Instructions

  • Add all ingredients to a small high-speed blender. (I use a small Nutribullet which works great.) Blend for 20-30 seconds until smooth.
  • Taste and adjust flavors if desired. (Add more lemon or lemon zest, salt, etc.)
  • Serving note: This dressing is best served fresh because the texture changes as it chills. It becomes thicker and gel-like due to the blueberries which are high in pectin, a natural gelling agent. However you can store the leftover dressing in a sealed glass mason jar (or other airtight container) in the refrigerator for about 3 days. Before serving again, I allow it to return to room temperature (setting it out for about 15 minutes) then give it a good stir or whisk.

Notes

*Blueberries: 1 cup equals about 5 oz. by weight.
For oil-free: Ensure your hummus is oil-free. (Most store-bought versions usually contain added oil.) So use my homemade oil-free hummus or your own favorite.
Variations: Add 1 tsp. lemon zest, 1-2 Tbsp. fresh basil, 1/2 tsp. Dijon mustard, splash of balsamic vinegar, etc.
Yield: Recipe makes 1 heaping cup dressing. (About 1 cup + 2 Tbsp.)
