Ingredients

For the wet ingredients:

  • 2 cups dairy-free milk
  • 1/4 cup pure maple syrup
  • 1/4 cup peanut butter (creamy, natural)
  • 1 Tbsp. ground flax
  • 2 tsp. pure vanilla extract
  • 1/4 tsp. almond extract

For the dry ingredients:

  • 2 cups old-fashioned rolled oats (GF if desired)
  • 1/4 cup cocoa powder
  • 1/4 cup vegan chocolate chips
  • 1 tsp. baking powder
  • 1/4 tsp. salt

Instructions

  • Preheat oven to 350°F (180°C).
  • In a large mixing bowl, combine all wet ingredients and whisk well to combine. (Soften the peanut butter in the microwave first if needed.)
  • Then add the dry ingredients. Stir well until the cocoa powder clumps are dissolved and combined.
  • Pour the mixture into an 8 x 8" baking dish. Gently stir to evenly disperse the oats, and lightly press down so they're mostly submerged in the liquid. Sprinkle more chocolate chips on top if desired.
  • Bake for about 35 minutes.* Then remove from oven and let cool for about 5-10 minutes. Serve with sliced bananas, berries, a drizzle of peanut butter, splash of milk, etc.

Notes

*Baking time: Adjust this to achieve your preferred texture. Bake 30-35 minutes for a soft, moist texture. Or 35-40 for more dry and firm.
For oil-free: Ensure your chocolate chips don't contain added oil.
Nut-free: Omit the almond extract, use a nut-free milk, and use sun butter or other seed butter in place of peanut butter.
Gluten-free: Ensure your oats are gluten-free.
