Brownie Baked Oatmeal (Easy!)
This easy Brownie Baked Oatmeal combines rich, brownie flavor with wholesome, breakfast-friendly ingredients! It's naturally sweetened and delicious topped with fresh berries, nut butter, or banana.

For the wet ingredients:
- 2 cups dairy-free milk
- 1/4 cup pure maple syrup
- 1/4 cup peanut butter (creamy, natural)
- 1 Tbsp. ground flax
- 2 tsp. pure vanilla extract
- 1/4 tsp. almond extract
For the dry ingredients:
- 2 cups old-fashioned rolled oats (GF if desired)
- 1/4 cup cocoa powder
- 1/4 cup vegan chocolate chips
- 1 tsp. baking powder
- 1/4 tsp. salt
Preheat oven to 350°F (180°C).
In a large mixing bowl, combine all wet ingredients and whisk well to combine. (Soften the peanut butter in the microwave first if needed.)
Then add the dry ingredients. Stir well until the cocoa powder clumps are dissolved and combined.
Pour the mixture into an 8 x 8" baking dish. Gently stir to evenly disperse the oats, and lightly press down so they're mostly submerged in the liquid. Sprinkle more chocolate chips on top if desired.
Bake for about 35 minutes.* Then remove from oven and let cool for about 5-10 minutes. Serve with sliced bananas, berries, a drizzle of peanut butter, splash of milk, etc.
*Baking time: Adjust this to achieve your preferred texture. Bake 30-35 minutes for a soft, moist texture. Or 35-40 for more dry and firm.
For oil-free: Ensure your chocolate chips don't contain added oil.
Nut-free: Omit the almond extract, use a nut-free milk, and use sun butter or other seed butter in place of peanut butter.
Gluten-free: Ensure your oats are gluten-free.
