Maple Balsamic Dressing (Oil-Free!)

This full-flavored dressing is deliciously tangy with a hint of sweetness and bright herb accents. Easy to prepare and great on a wide variety of salads!

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 Tbsp. pure maple syrup
  • 2 Tbsp. water
  • 1 Tbsp. tahini
  • 1 tsp. Dijon mustard
  • 1/2 tsp. white miso
  • 3/4 tsp. Italian seasoning
  • 1/4 tsp. garlic powder (or fresh clove)
  • Optional: 1/4 tsp. fresh rosemary

Instructions

  • Add all ingredients to a small high-speed blender. (I use a Nutribullet which works great.) Blend for 20-30 seconds until smooth and combined.
  • Taste and adjust flavors if desired. If it's too tangy/acidic for your taste, you can slightly increase the maple syrup, water, or tahini.

Notes

Storing: Store the dressing in a sealed jar or airtight container in the refrigerator. I find it keeps for about 5-7 days. It thickens more as it sits, so it's great made ahead of time.
Chia seeds: I originally posted this recipe using 2 tsp. chia seeds instead of 1 Tbsp. tahini. I prefer the tahini version now, but either one works.
Yield: Recipe makes about 3/4 cup dressing (just under).
