Orange Creamsicle Popsicles (Easy, Healthy!)
These bright, sunshiny popsicles capture the essence of classic creamsicles... but are made with healthier ingredients and no refined sugar! Easy to make with vibrant citrus flavor.

- 2 cups pure orange juice*
- Zest from 1 orange
- 3/4 cup vegan Greek yogurt (unsweetened, plain)
- 1/4 cup pure maple syrup
- 1 Tbsp. fresh lemon juice
- 1/2 tsp. vanilla extract
- Pinch of salt
Zest one orange with a fine grater or microplane zester. Be sure to only grate the bright orange outer layer (avoiding the white spongy layer underneath the skin called the pith because it's very bitter). Use 1-2 Tbsp. zest depending on how strong you'd like the flavor.
Place all ingredients in a blender. (You can adjust the yogurt amount as desired. Sometimes I drop it down to 1/2 cup for a bolder orange flavor and icy texture, or you can increase to 1 cup for subtler flavor and slightly creamier texture.) Blend for 10-15 seconds until smooth and combined.
Pour the mixture into your popsicle molds and insert popsicle sticks.
Freeze for at least 6 hours or until frozen solid. (The final texture of the pops strikes a balance between icy and slightly creamy.)
*Orange juice: Either freshly squeezed or store-bought. I use a combination the of two. I squeeze 1-2 fresh oranges (used for the zest) then fill in the rest with refrigerated 100% no-pulp orange juice with no added sugar.
Yield: Recipe makes about 3 1/3 cup (27 ounces) of the liquid mixture before freezing. For me, this makes 9 pops at about 3 ounces each. (I use a silicone mold.) You may find it yields more or less depending on your mold.
