Strawberry Balsamic Dressing (Oil-Free!)

This easy strawberry dressing blends up in 5 minutes! It's a refreshing balance of sweet, tangy, and slightly creamy.

Ingredients

  • 5 oz. fresh strawberries, hulled*
  • 1/4 cup balsamic vinegar
  • 1 Tbsp. pure maple syrup (more or less)
  • 1 Tbsp. tahini
  • 1 1/2 tsp. Dijon mustard
  • 1/8 tsp. salt

Stir-in (optional):

  • 1-2 tsp. poppy seeds

Instructions

  • Place all ingredients except poppy seeds in a small high-speed blender. (I use a Nutribullet which works great.) Blend for about 20-30 seconds until smooth.
  • Then stir in the poppy seeds, if using, after blending.
  • Store the dressing in a sealed jar or airtight container in the refrigerator. (It slightly thickens more as it sits.) I find it keeps for about 4 days.

Notes

*Strawberries: 5 oz. equals about 1 heaping cup strawberries.
Yogurt option: Add a dollop or two of vegan yogurt (plain & unsweetened) for an even thicker, creamier consistency. (Either use this in place of the tahini, or in addition to it - whatever you prefer.)
Yield: Recipe makes 1 heaping cup dressing.
