Strawberry Baked Oatmeal (Naturally Sweetened!)

This warm, hearty baked oatmeal is made with a fresh strawberry compote, creamy almond butter, and maple syrup. Perfect for meal prep!

Ingredients

Wet ingredients:

  • 1 1/4 cups dairy-free milk
  • 1/4 cup almond butter
  • 2-3 Tbsp. pure maple syrup
  • 2 Tbsp. ground flax
  • 2 tsp. pure vanilla extract
  • 1/4 tsp. almond extract (optional)

Dry ingredients:

  • 2 cups old-fashioned rolled oats
  • 1/4 cup sliced almonds
  • 1 tsp. baking powder
  • 1/4 tsp. salt

Strawberry compote:

  • 16 oz. fresh strawberries
  • 2 Tbsp. pure maple syrup
  • 1 Tbsp. fresh lemon juice

Instructions

  • Oven: Preheat the oven to 350°F (176°C). Grease or line an 8x8-inch pan if you wish. (I don't bother with this step and find there's minimal sticking.)
  • Make the compote: Hull and dice the strawberries. In a medium skillet, add the strawberries, maple syrup, and lemon juice. Cook uncovered over medium heat for about 15 minutes, stirring occasionally, until the strawberries have broken down and the mixture is thick and "jammy". Then remove from heat and let it cool for a few minutes.
  • Wet ingredients: While the compote cooks, add all wet ingredients to a large mixing bowl. Whisk until smooth. Set aside and let the mixture rest for about 5 minutes so the flax thickens.
  • Dry ingredients: After about 5 minutes, add all the dry ingredients to the wet ingredients. Stir until evenly combined.
  • Add compote: Fold the cooled strawberry compote into the oat mixture until it's incorporated.
  • Bake: Pour the mixture into your baking dish and spread it into an even layer, gently pressing down with a spatula. (Then I like to sprinkle a few more sliced almonds on top.) Bake for about 35-40 minutes, or until the edges are lightly golden.
  • Rest & cool: Remove pan from oven and let it rest for 10-15 minutes before serving. This allows it to firm up.

Notes

*Strawberries: 16 oz. equals about 3 cups diced strawberries.
Variations: Add 1/2 tsp. ground cinnamon, lemon zest, mashed banana, coconut, chocolate chips, etc.
Serving: Serve it plain or top with a splash of milk, yogurt, banana slices, fresh berries, etc. This yields 6 hearty main servings, or 8-10 smaller/snack portions.
For gluten-free: Ensure your oats are GF.
