Tamari Roasted Nuts (Savory!)

Easy-to-make roasted nuts with irresistibly savory flavors! A crowd-pleasing snack for parties, holiday spreads, charcuterie boards, or everyday enjoyment.

Ingredients

  • 2 cups nuts* (raw, unsalted)
  • 2 Tbsp. tamari
  • 2 tsp. rice vinegar, unseasoned
  • 1/2-1 tsp. coconut sugar or pure maple syrup**
  • 2 tsp. sesame seeds
  • 1 tsp. garlic powder
  • 1/2 tsp. onion powder

Instructions

  • Preheat oven to 250°F (130°C). Line a baking pan with parchment paper and set aside.
  • In a medium bowl, add all ingredients except nuts. Stir to combine.
  • Then add nuts and toss well to coat. Spread out nuts in a single, even layer on the lined baking pan. (I drizzle any remaining sauce over the top for full flavor.)
  • Roast for 35-40 minutes stirring a couple times to prevent burning. (I roast for 15 minutes, stir, 15 minutes, stir, 10 minutes.)
  • Remove from oven and cool completely before serving. They'll be soft and tender when they come out of the oven, but harden as they cool.

Notes

*Nuts: I use 2/3 cup each of walnuts, pecans, and almonds. (Update: now I swap in cashews for the almonds!) But you can use any combination of walnuts, pecans, almonds, cashews, peanuts, etc.
**Sweetener: Just a little helps balance the flavors. However the texture of the finished nuts will vary based on which sweetener you use. Maple syrup makes the nuts softer and slightly sticky. Coconut sugar keeps them crisp and crunchy. (I now use the coconut sugar option, and recommend this especially if you're gift-giving these. This way the nuts won't stick together in your storage container.)
Storing: Allow the nuts to cool completely, then store in an airtight container at room temperature for about 1-2 weeks.
