Chunky Monkey Protein Smoothie (Vegan!)
This rich, energizing smoothie packs 18 grams of plant protein... with no protein powder! Great for a quick breakfast, midday boost, or post-workout snack.

Servings: 1 large smoothie
- 1 cup soy milk
- 1 very ripe banana (sliced, frozen)
- 2 Tbsp. peanut butter, creamy & natural
- 1 1/2 Tbsp. cocoa powder
- 2 tsp. pure maple syrup
- 1 tsp. vanilla extract
- Pinch of salt
Place all ingredients in small high-speed blender. (I use a Nutri-Bullet which works great.) Blend for 20-30 seconds until silky smooth. (Stop to scrape down the sides with a spatula if needed.)
Taste and adjust flavors if desired.
Other additions: Add chocolate protein powder, chia seeds, ground flax seeds, mushroom powder, ice cubes, a handful of fresh baby spinach, or a very tiny splash of almond extract (be careful as this can quickly overpower).
Smoothie bowl: Serve with granola, sliced banana, coconut flakes, berries, dairy-free whipped cream, or your own favorite toppings.
Yield: Recipe makes about 1.75 cups smoothie. (This is one large or two small smoothies.)
