Strawberry Cream Popsicles (Dairy-Free!)

These delicious Strawberry Cream Popsicles are so refreshing and easy to prepare with simple ingredients. Plus they're dairy-free and naturally sweetened! (Vegan, gluten-free, refined oil-free.)

These homemade strawberry popsicles are a refreshing treat for both kids and adults alike! They're a delicious combination of sweet and creamy.

Plus they're quick and easy to prepare right in the blender. Then you just pour the mixture into your favorite popsicle molds and let the freezer do it's thing.

Making your own popsicles at home is not only easy, but allows you to control the ingredients. This way you can avoid any unwanted fillers or additives often found in store-bought versions. (And also control the sugar!)

Ingredients for Strawberry Cream Popsicles

For this recipe, you'll blend together in a high-speed blender then freeze:

  • Coconut milk: You'll need a 13.5-ounce can of full-fat coconut milk for this recipe. I use full-fat to help create a creamy texture. Give the can a good shake before opening to help combine the separated layers.
  • Frozen strawberries: I use frozen organic strawberries, but fresh can work too. If you're using fresh strawberries, just be sure they're ripe and flavorful for best taste.
  • Pure maple syrup: This adds natural sweetness to the pops. Feel free to add more or less to your liking. You can also substitute with another liquid sweetener such as agave nectar or vegan honey to taste.
  • Fresh lemon juice: This adds bright flavor and a little zing to the pops!
  • Pure vanilla extract
  • Pinch of salt

Customizing

Extra lemon: For an extra-bold taste, add a half teaspoon of lemon zest or even more lemon juice.

Dairy-free yogurt: You can also include a half cup of vegan Greek yogurt in the blended mixture. This adds extra creaminess and protein.

Other fruit: Change it up with other fruit or berries such as blueberries, raspberries, blackberries, mango, peaches, or a combination of these. I haven't tried these versions yet, but I'm guessing they'd work great! Banana or frozen banana slices could also be included.

Sliced fruit: Add thinly sliced strawberry pieces in your popsicle molds to accompany the blended mixture. Place the slices at the bottom or sides of your molds before pouring in the liquid mixture.

Fresh herbs: For a different flavor profile, add a tiny amount of chopped fresh mint or fresh basil. (Or if you're feeling adventurous, try a splash of balsamic vinegar with the fresh basil!)

Tips for Success

Pouring into molds: This recipe yields about 3 cups (24 ounces) of the liquid strawberry mixture pre-frozen. So a 12-cavity popsicle mold with 2-3 ounce cavities works great. (I fill 10 cavities with about 2.5 ounces each.) You may find the servings vary depending on the mold you're using. I use a silicone popsicle mold.

Freezing: You'll want to freeze these popsicles for at least 5-6 hours (or until completely solid) in your freezer before enjoying.

Removing the pops: To remove from the molds, set them out on the counter at room temperature for several minutes. Or you can also run them under warm water for several seconds until they slide right out.

These refreshing strawberry popsicles are made right at home with simple, healthy ingredients. A delicious blend of sweet & creamy!

Ingredients

  • 13.5 oz. can coconut milk, full-fat
  • 2 cups strawberries (I use frozen)
  • 1/4 cup pure maple syrup (or more)
  • 1 1/2 Tbsp. fresh lemon juice
  • 1 tsp. pure vanilla extract
  • Pinch of salt

Optional:

  • 1/2 cup dairy-free Greek yogurt, lemon zest, etc.

Instructions

  • Add all ingredients to a high-speed blender. (I give the can of coconut milk a good shake before opening to help combine the separated layers.)
  • Blend for about 20-30 seconds until completely silky and smooth.
  • Then pour the mixture into popsicle molds (leaving a little space to allow for expansion). Add popsicle sticks, then place in the freezer for about 5-6 hours, or until frozen solid.
  • To remove popsicles from the mold, set them on the counter at room temperature for several minutes, or run the mold under warm water for a few seconds to help them slide out.

Notes

Yield: Recipe makes about 3 cups (24 ounces) of the liquid strawberry mixture pre-frozen. For my popsicle mold, this makes roughly 10 (2.5-ounce) pops. You may find it's more or less depending on your mold. (I use a silicone mold.) If using the optional yogurt, I get about 12 pops.
Variations: Add more maple syrup for sweeter, creamier pops. Or add more lemon juice, lemon zest, banana, or even fresh mint or basil for an herby flavor.

    Absolutely delicious! I'm a sucker for popsicles and was thrilled to find a healthy replacement for the not-so-healthy varieties available in stores.
