Vegan Green Bean Recipes
Explore 11+ easy vegan green bean recipes! Green beans are rich in vitamins K, A, and C and also include fiber, potassium, iron, and folate. They're available year round, but peak season is summer through early fall. (This is when nutrients & flavor are best, and cost is lowest.)
Varieties: Regular garden snap beans are the most common variety, but you can also find haricots verts (French beans), Romano beans, runner beans, and Chinese long beans. The recipes below all use regular snap beans since these are the easiest to find.
Shopping tip: Choose beans that are vibrant in color, smooth, firm, and snap when bent. Avoid ones that are soft, discolored with brown spots, or wrinkled as these are no longer fresh. (I also purchase organic when possible.)
