    Vegan Cashew Recipes

    Browse 15+ easy vegan cashew recipes! These healthy recipes either feature or include this nutrient-rich nut. Most often I use raw cashews because these are fantastic blended up in sauces, dressings, etc. They create such a creamy, rich base! But if purchasing roasted cashews, I suggest seeking out "dry roasted" as these are not cooked in oil. Cashews are rich in protein, magnesium, zinc, various phytonutrients, and tryptophan which is said to be sleep-promoting.

    Tip: Be sure to store your cashews in airtight containers in the refrigerator or freezer to extend the shelf life. The general estimate is they last for about 6 months in the fridge or 1 year frozen. I purchase organic cashews whenever possible.
