Vegan Tofu Recipes

It's high in protein and also contains a good source of calcium and iron. It comes in five different varieties: silken (for smoothies, desserts, etc.), soft, firm, extra firm, and super firm. Most often I use extra firm for my recipes, and I purchase organic tofu whenever possible.
Pressing your tofu: Tofu typically comes in a large 14-ounce block immersed in water. A tofu press is a handy kitchen gadget that's used to help squeeze out the liquid before preparing. This helps the tofu better absorb marinades and flavors. But if you don't have one, you can simply press the tofu between paper towels.
Tofu is a great egg replacement in breakfast scrambles, plus tasty when baked or used in stir-fry.
