Varieties: Packaged tofu comes in several different varieties. Silken tofu is very soft and barely holds it's shape. (It's often used for blended smoothies, desserts, creamy sauces, etc.) Silken tofu comes in both shelf-stable and refrigerated packages. Then there's soft, medium, firm, extra-firm, and super-firm (also called high-protein). Super-firm is very dense and doesn't need pressing. I purchase organic tofu whenever possible.
Pressing your tofu: Most tofu comes as a 14-ounce block that's packed in water. So removing that excess liquid helps it soak up marinades and flavor. A tofu press is a handy kitchen gadget that makes the job easy. But if you don't have one, you can simply press the tofu between paper towels and weigh it down.
Versatility: Swap it in for eggs in breakfast scrambles or use it in place of chicken and beef in a variety of other dishes. It's also great baked, tossed in a stir-fry, or seasoned any way you like.
