Vegan Cucumber Recipes
Browse 15+ easy vegan cucumber recipes! Cucumbers are available year round, but their peak season runs in the warm summer months from May through July. They come in several different varieties such as common garden cucumbers, English cucumbers (also known as hothouse), pickling cucumbers (also called gherkins), and more. Most often I use garden cucumbers and English depending on what's available.
Cucumbers are crunchy, refreshing, cooling, and nutritious. They are a good source of vitamin C, vitamin A, molybdenum, potassium, and more. Plus they're versatile! Try diced cucumbers in salads, thinly sliced in sandwiches and wraps, as a simple snack, or in refreshing drinks.
Tip: I also enjoy sliced cucumbers dipped in homemade Hummus for a healthy snack or appetizer.
