Vegan Cucumber Recipes
Browse 15+ easy vegan cucumber recipes that celebrate this crisp, crunchy, refreshing ingredient! Cucumbers are available year round, with their peak season in the warm summer months from May through July.
Varieties: You'll find a few varieties such as common garden cucumbers, English cucumbers (also known as hothouse), pickling cucumbers (also called gherkins), and more. Most often I use organic English cucumbers. These are grown in greenhouses, have thinner skins, are mostly seedless, and are often easier to digest than other varieties.
Benefits: Naturally cooling and hydrating, cucumbers are a good source of vitamin C, vitamin A, molybdenum, potassium, and phytonutrients.
Buying tip: Conventionally grown cucumbers are typically waxed to extend their shelf life, while organically grown are not waxed. I also find that thinner cucumbers generally have less seeds than the thicker ones.
Versatility: Try diced cucumbers in salad, thinly sliced in sandwiches and wraps, as a simple snack, or in refreshing drinks. (I also enjoy sliced cucumbers dipped in homemade Hummus for a healthy snack or appetizer!)
