Varieties: The two most common varieties are curly parsley and flat-leaf Italian parsley. I often use them interchangeably depending on what's available, however Italian parsley tends to be slightly less bitter than curly parsley.
Buying tip: When selecting parsley, look for leaves that are dark green, fresh, and crisp. (Avoid leaves that are yellow.) I also purchase organic whenever possible.
