    Vegan Parsley Recipes

    Browse 15+ vegan parsley recipes! These easy, healthy recipes either feature or include this tasty fresh herb. Parsley is rich in nutrients and a great source of vitamin K, vitamin C, and vitamin A. It also contains phytonutrients, carotenoids, and flavonoids that provide additional health-promoting benefits.

    The two most common varieties are curly parsley and flat-leaf Italian parsley. I often use them interchangeably depending on what's available, however Italian parsley tends to be slightly less bitter than curly parsley.

    Tip: When selecting parsley, look for leaves that are dark green, fresh, and crisp. (Avoid leaves that are yellow.) I try to purchase organic when possible.
