Browse 40+ easy vegan mushroom recipes! Mushrooms are a staple in plant-based cooking thanks to their hearty texture, umami flavor, and ability to stand in for meat in many classic dishes. They're available year-round, and work great in everything from soups and stir-fry, to sauces and sandwiches.

Buying & storage tips: Choose mushrooms that are firm & plump, and avoid any that look slimy or wrinkled. Store them in the refrigerator. Loose mushrooms keep best in a paper bag, while pre-packaged mushrooms store well as-is because they're vacuum-sealed. Just be sure not to wash them before storing to extend freshness.
