Sweet corn is a good source of vitamin C, dietary fiber, folate, and many other nutrients including vitamins B1 and B5. Corn typically comes in both white and yellow varieties. White corn is a little sweeter, while yellow corn provides extra health benefits like vitamin A and beta-carotene.
Tip: Peak season for sweet corn is typically mid-summer through early fall. This is when the concentration of nutrients and flavor is highest, but the cost is generally lowest. I use a variety of fresh sweet corn on the cob, frozen corn, and canned corn depending on the season and what's available. However I always try to purchase organic corn when possible.
