Varieties: Bell peppers are a member of the nightshade family. They come in four different color varieties: green, yellow, orange, and red. Green bell peppers are slightly bitter in taste and are harvested before they're ripe. (They continue to turn yellow then red as they mature on the plant.) Orange and yellow peppers have a slight fruity taste and are sweeter than green. Red bell peppers are the most mature of the four, and are said to contain more vitamin C and about 10 times more beta-carotene than green bell peppers. They also have a slightly fruity, sweet taste.
Health benefits: Bell peppers are one of the highest sources of vitamin C as far as nutrient density. They're also a great source of vitamins A, K, B6, and phytonutrients that provide antioxidant protection. (I also purchase organic whenever possible.)
