  1. Hi. I came across your blog through a pin from pinterest. It started with the Black Bean Enchiladas and I have been glued to your website over the past hour pinning all the recipes I like.
    I am definitely going to try the Black Bean Nacho Pizza in the next week.

I'm going to try the black bean& Spinach enchilada, the 17 bean soup and the pesto mushroom lover pizza next week, I've already added the ingredients to my list i can't wait!!!   3. Yesterday i made the Black Bean and spinach enchilada's they were so delicious! I ended up having to use frozen spinach (which i thawed) instead of the fresh because i didn't have enough fresh and it still turned out amazing! It was so easy to make, my husband loved them and they were even good the next day for lunch!

    Tonight i made the tortellini soup...i just have no words it was so delicious both me and my hubby had to have seconds haha that never happens...and I'm looking forward to leftovers for lunch. I was amazed how easy it was to make the soup from scratch i did add a few more veggies that i just needed to use up (spinach, celery)and used fresh basil instead of dried because I had some on hand.I think this soup is my favorite so far, i plan to try the 17 bean soup and the mushroom pesto pizza later in the week i'll let you know how it goes!!!!!

  5. Okay, So I definitely came across your website on Pinterest like everybody else, but it is seriously the best one I have found! I'm so excited to try a whole bunch of these recipes and start making them a a part of my weekly menu! I'm on board with slowly switching to mostly vegetarian meals and this website is perfect for me! I'm obsessed with mexican food and ALL of your recipes look absolutely amazing! I don't have a ton of experience in the kitchen and your recipes are easy to follow and not horribly complex! Thank you SO much for sharing all these awesome meals, I can't begin to tell you how much they have helped me!!!!!

  14. I came across your website looking for a homemade cilantro dressing to use on salads, it's such a summer staple for me that the dressing can really make or break it. It was delicious!   17. I think you do such a great job showing pictures and giving step by step instructions. Weve been making your quinoa asian mushroom dish and the chili on a weekly basis! I am wondering if you have any good breakfast ideas to share? perhaps a quinoa oatmeal or a healthier version of pancakes?

Breakfast is something I really need to get better with - I will definitely keep your suggestions in mind for future recipes.   18. Last weekend, I had the MOST delicious burrito that was covered in a creamy chipotle sauce that may have been the best tasting food to ever cross my lips. I have been dreaming about this sauce all week. I was in the "everything" category on Pinterest and behold! A recipe for Chipotle sauce! Oh man. I am going to go on a hunt for chipotle in adobo sauce! I happened to browse the rest of your blog and I have pinned at least 3 from each meal type. THANK YOU!
